My Take on TikTok’s Pumpkin Cheesecake Bread

This is the perfect recipe for newbie-bakers or those who are simply looking to spice up their fall recipes. Thanks to TikTok, this will definitely become a seasonal staple for me!

I found this recipe while scrolling on TikTok and now, I’ll be making this every fall! Though I’m not a huge fan of pumpkin-flavored things, this recipe looked too good to pass up and the comment section assured me the flavor was not overpowering. It’s the perfect combination of sweetness and the classic pumpkin taste.

Ingredients:

Pumpkin Bread

  • 1 cup pumpkin puree
  • 1 egg
  • ½ cup brown sugar
  • ¼ cup sugar
  • Vegetable oil (I used a splash!)
  • Light sour cream (I used a spoonful!)
  • 2 tbsp vanilla extract
  • Load up with pumpkin spice (measure with your heart!)
  • 1 cup flour (feel free to add more, if your batter needs it!)
  • 1 tsp baking powder

Cream cheese filling

  • 4oz cream cheese
  • 1 egg
  • ¼ cup sugar
  • ¼ cup flour

Directions:

Preheat the oven to 350 degrees, and grease your pan with cooking spray. I used an 8 ½ by 4 ½ bread pan.

In a large bowl, add pumpkin puree, an egg, brown sugar, white sugar, vegetable oil, light sour cream, vanilla extract and pumpkin spice. Mix this up until it looks like baby food.

Then add flour and baking powder and mix again. This will be the first layer that you pour into your pan!

For the cheesecake filling, you’ll mix 4oz softened cream cheese, an egg, ¼ cup sugar and ¼ cup flour in a separate bowl. This will be the second layer. You can choose whether to keep it in the center (like the video shows) or pour it evenly on top of the pumpkin batter. 

Personally, I wish I poured it evenly because the end pieces ended up with no cream cheese filling. This is the baker’s choice!

Pour another layer of pumpkin batter, and another layer of cream cheese. Take a toothpick to swirl these two layers. This step doesn’t do much for taste, but it does make it pretty!

Pop this in the oven for around 45 minutes, and when you think it’s fully cooked, check to make sure that you can insert a toothpick and have it come out clean. 

I recommend following this recipe up with your favorite seasonal coffee and a Halloween movie! :)
