Eating a plant-based diet can seem daunting at first, but with the right recipes your meals do not have to be boring! Thanksgiving is a perfect time to try out some new fall meals. Whether you are vegetarian or not, these recipes will have your mouth watering and are the perfect way to spice up your diet! 

Butternut Squash Soup 

Butternut squash has been my go-to ingredient this year because it is so versatile! There is nothing like making a big bowl of soup to go along with the brisk fall weather. This recipe only has 10 ingredients, so it is not hard to make! Soup is also a great meal to make and save for an easy lunch or dinner the rest of the week.

Vegan Pumpkin Pasta 

Who says vegan pasta cannot be creamy and delicious?! With roasted pumpkin and mushrooms, this is the ultimate comfort food for a nice meal by the fire! Disclaimer: here is a shameless plug for my favorite kind of noodles. Once I had Banza’s chickpea noodles, I have never gone back to normal pasta.

Pumpkin Chickpea Curry 

Hello YUM! Curry is my all time favorite food, so finding a way to incorporate pumpkin was a necessity this fall. This recipe can also easily be made vegan, which is another plus!

Fall Veggie Vegan Tacos 

My favorite kind of veggies are fall veggies! These tacos are so easy to make and do not take a long time. With roasted butternut squash and cauliflower, how can you say no?! Adding roasted sweet potato and red peppers to these tacos makes them even better!

Sweet Potato Black Bean Burrito Bowl 

Sweet potatoes have become a staple in my diet and I find myself roasting them multiple times a week. Not only is this meal perfect for meal prep, but it is also gluten free AND vegan! You can sign me up for anything that has cilantro lime rice and avocado involved.

Pumpkin Pie Oatmeal 

Pumpkin pie but make it breakfast and simple! Cooked in the slow cooker, these oats will make it feel like you are eating dessert in the morning. This recipe is equally as delicious heated up, so leftovers are a must!
