As college students, it can be difficult sometimes to eat healthily. It’s easy to get into the habit of reaching for that ramen or mac and cheese at lunch. If you’re looking for a healthy and delicious recipe to make in your dorm on campus or in your apartment, keep reading! This is my recipe for a mean Greek salad with a twist. It’s so scrumptious that you’ll want to tell your friends about it.
Ingredients
3 cups romaine or butter lettuce
¼ cup feta cheese
⅓ cucumber
¼ cup shaved carrots
¼ cup kalamata olives
⅓ avocado
¼ cherry tomatoes
1 cup rotisserie chicken breast
ranch dressing (this is what makes it a Greek salad with a twist!)
ground pepper
Directions
Wash and chop the lettuce. Shave your carrots thinly with a peeler. If you don’t have a peeler, chopping the carrots is perfectly fine also! Chop the cucumber into small pieces along with the avocado. Add the cherry tomatoes and crumble the feta. Chop the chicken into small pieces. Add the kalamata olives (my favorite part) and add your ranch. Toss the salad and add some ground pepper to top. Plate and enjoy!
