We have officially reached that point in the semester where the monotony of the dining hall is starting to get unbearable! Hopefully these simple hacks can help add some variety to your life!
Breakfast: Peanut Butter “Banana Bread”
Ingredients:
1 Peanut Butter Banana Clif Bar
1 Banana
1 tbsp Peanut Butter
Directions:
Place the Clif Bar on a microwaveable plate and microwave for 30 seconds.
Top the Clif Bar with banana slices.
Drizzle with peanut butter.
Lunch: Pasta Salad
Ingredients:
1-2c Cold Pasta (from the pasta bar)
1c Mixed Vegetables (from the Salad Bar)
½ tbsp Oil (from the salad bar)
1 tbsp Balsamic Vinegar (from the salad bar)
Directions:
After getting a weird look from the lady at the pasta bar because you asked for a bowl
of cold pasta, mix all of your ingredients together!
Dinner: Asian Rice Bowl
Ingredients:
1c Brown or White Rice (from the vegan or stir-fry station)
1 ½ c Mixed Vegetables (from the salad bar)
1 tbsp Peanut Butter
½ tsp Sriracha
1 tbsp Soy Sauce
2 tbsp Water
Directions:
Combine the rice and veggies in a bowl.
In a separate bowl mix the peanut butter, sriracha, soy sauce, and water to create a sauce for the rice bowl.
Drizzle the sauce over the rice and veggies.
Dessert: Apple Crumble
Ingredients:
1 Apple
½ tbsp Honey
½ tsp Cinnamon
½ c Granola
Directions:
Chop the apple into bite sized pieces.
Place the chopped apple, honey, and cinnamon in a microwave safe bowl.
Microwave for 2 minutes, or until the apples are soft.
Top with the granola and heat for another 30 seconds.
