2 Ingredient Pizza Base! Homemade Pizza Hack

We all know that making food from scratch carries a lot of weight in culinary society today. You just have to turn on Come Dine with Me and see Kieth marking Sandra down, because she didn’t milk her own cow for the dessert cream, to see how much people care about you spending the whole day making something for them to shove in their face and have forgotten about within the hour.

But what if it didn’t have to be so difficult? My love for carbs led me to try this simple recipe for dough a few weeks ago and I have literally not left it alone since (but don’t worry, we all know that whatever you make from scratch is completely void of any calories, right?) For such a fussy eater, as a vegetarian and someone, or some weirdo depending on your level of passion for cheese, who hates melty cheese, this recipe made the impossible possible!

Serves: 4 (or 1 if you had a bad day)

Ingredients:

Base

1 Cup Fat Free Greek Yoghurt

1- ½ Cups Self-Raising Flour (extra for dusting surfaces)

A pinch of salt

Topping

½ tin Chopped tomatoes

1-2 tbsp Balsamic vinegar

1 tbsp Brown sugar

Italian herbs: Basil, oregano

100g Halloumi

1/2 – Full Red Pepper

1 Medium Onion

1-2 Garlic Cloves

Method:

Preheat oven to 200°C/ Gas Mark 6

Combine yoghurt and flour together and mix (initially use a spoon to save your hands being caked in yoghurt!)

When combined into a dough, flour a surface, knead and roll out to your desired thickness

For the topping: combine chopped tomatoes, balsamic, sugar and herbs in a side bowl, stir and spoon onto the pizza

Then top with whatever you want! You can follow my recipe, slicing onion, garlic, pepper and halloumi for a melty-cheese-free pizza or reinstate melty cheese dominance and load it up!

Drizzle pizza and tray with small amount of olive oil and cook in the oven for 10-15 minutes, depending on preference

Serve and enjoy!

This recipe is great for the busy bee, parent or show off trying to impress a date or a group of mates coming over for footie or film night!
