Cooking in college can be challenging, especially when you are running thin on both time and money. Here are some healthy, easy chicken recipes for you to experiment with!

chicken parmesean, made easy

I probably make chicken parm at least once a month. This recipe uses only five main ingredients and takes an estimated twenty-five minutes, which is totally worth it for delicious crispy chicken parmesan tenderloins! Bonus points if you serve it with pasta. (I *actually* made this successfully and can confirm it was both easy and delicious!)

instant pot chicken noodle soup

There is nothing better than coming home and smelling chicken noodle soup my roommate is cooking up in the instant pot. This recipe includes a little more prep time to cut up all your vegetables, but it is so worth it. It also uses egg noodles for quick cooking. Don’t forget bread or crackers to serve with it!

chicken fajitas

Another recipe that only uses a handful of ingredients, is healthy, and takes only thirty minutes to both prep and cook! Fajitas are such an easy go-to recipe.

crispy chicken salad

I absolutely love crispy chicken salads from restaurants and have tried to recreate them. This recipe is the closest one I could find! You can mix and match things too, like whether or not to include hard-boiled eggs, which veggies to include, etc.

chicken stir fry

This is another recipe that allows you the freedom to experiment with different flavors, veggies, and garnishes. I once read adding a spoonful of peanut butter adds some extra flavor, if you’d like to try!
