Food Blog: Savory Chicken Tacos

Our resident HerCampus ISU cooking-lover Julie Florence recently tested out her Pinterest skills by taking on an amazing recipe she found for slow-cooker chicken tacos. She documented her efforts for our latest Food Blog article so read more to see how they turned out!

I saw a recipe on Pinterest for slow cooker chicken tacos. They looked so amazing and I really wanted to try them but I don’t have a crock pot, so I improvised! This recipe is super easy and pretty cheap for the struggling college student. So grab your friends, make some Mexican food and feel free to add some margaritas, as well!

Ingredients:

-3 chicken breasts, thawed

-Tortillas, corn or flour

-1/4th jar Salsa, your choice: hot, medium mild, etc.

-1/4th packet taco seasoning

– Cheese

– Cooking spray

– Any other extras you want: lettuce, sour cream, guacamole, tomatoes, etc.

 

1.       Cut up each chicken breast in to about 4 pieces.

2.       Spray pan with cooking spray and set the temperature on medium/high

3.       Add chicken breast to pan and cook thoroughly

4.       Once cooked, put on a plate and cut into tiny pieces or shred in a food processor

5.       Once cut up, return chicken back to the pan and add 1/4th cup salsa and 1/4th packet of taco seasoning

6.       Stir thoroughly and continue to heat.

7.       Heat up a tortilla in the microwave for 15 seconds.

8.       Scoop chicken onto tortilla and add cheese. Return to the microwave for 15 seconds to melt the cheese.

9.       Add your favorite toppings

These chicken tacos are super easy and you can make them in less than an hour. Oh, and they taste AMAZING! The salsa combined with the taco seasoning really adds a great flavor. This recipe makes approximately 6 tacos (made with small tortillas) so adjust the recipe according to the amount of people you are serving and enjoy!
