Now that I’ve lived in my off-campus house for the better part of a year, I’ve learned a thing or two about living independently. I’ve learned how quickly toilet paper gets used up and how often floors need to be swept. I’ve learned how expensive electricity and gas are, especially if your body temperature runs cold and you live in New England in the winter. I’ve also learned a thing or two about cooking, due to months of being forced to create my own meals three times a day. To save you some time and energy, here are a few of my favorite, easy meals to prepare at school.

Instant Oatmeal with Toppings

It’s as easy as 60 seconds in the microwave and you can add anything you like to it! You can make it with water or with milk or with nut milk or with oat milk. You can add some peanut butter, fruit, or cinnamon to really jazz it up. It’s a deliciously easy meal to start your day with!

Quesadilla

Quesadillas might be the most versatile food of all time. The sky is truly the limit when it comes to making a quesadilla. Whether it’s just plain cheese, or veggie, or steak, or chicken, it’s bound to be delicious. You can make them in a toaster oven or on the stove. I’m willing to bet you could probably bake it in the oven too. Either way, it’s a quick, easy, and filling meal for any time of day.

Veggie Burger and Salad

Yes, it sounds boring … but it’s also wicked easy. Frozen veggie burgers have a ton of protein and it only takes a few minutes to fry one up on a skillet. While your burger heats up, whip up a big salad with your favorite ingredients: cucumbers, feta cheese, tomatoes, bell peppers, etc. Just don’t add fruit to it because that’s weird (sorry not sorry!). I love this meal for a filling, yummy lunch between classes, but it could easily work for dinner too!

As a certified lazy girl and SUPER-amateur chef, trust me when I say these meals are both easy and delicious! Now you have no excuse not to cook for yourself. Don’t let those groceries go to waste!!
