There are numerous simple recipes available for college students who want to cook, but are not master chefs.  Between simple cookbooks geared toward students and online sites such as Pinterest, the amount of easy recipes are endless. So if you need a break from campus food, here are five simple recipes you can try out!

Oatmeal in a Mug

 

Breakfast is a great way to start your morning and get your metabolism going.  Start off by first making a package of your favorite oatmeal in a microwave safe mug using either hot water or milk.  For a more flavorful and filling breakfast add in some of your favorite fruits such as diced apples, bananas, raisins, etc. to the oatmeal.  If you came super prepared for college and happen to have some cinnamon and honey around in your dorm room, sprinkle that on top as well!

Microwave cheese quesadillas

Quesadillas are an easy approach to dinner and can be prepared in your dorm room microwave for those nights when you are up to your neck in school work.  Add shredded cheese and any other toppings you enjoy such as salsa, black beans, pinto beans, and/or peppers to a tortilla. Fold it in half and pop it into the microwave until warm. Cut the tortilla into triangles pieces and enjoy.
 

Mixed Berry Smoothie

This recipe is for those who brought a blender to college (which are allowed in the Hofstra residence halls!)  Smoothies are a delicious and healthy snack that can easily be poured in a to-go cup and be brought to class.  Start off by adding 1-2 cups off your favorite mixed berries, either frozen or fresh. Then add either 1 ½ cups of milk or greek yogurt, whichever option you have or prefer. Add 1 cup of orange juice, 2 cups of ice, and blend it all until smooth.

Sweet Healthy Dip

This is one of my favorite ways to make eating fruit feel more like a sweet treat.  Mix together a package off Cool Whip and one strawberry yogurt. Refrigerate until chilled and use this dip for any type of fruit you have!  You could also use graham crackers, Nilla wafers and animal crackers for dipping.  This dip can easily be refrigerated and ready to be eaten at any time.

French Bread Pizza

 

If you are tired of campus pizza, this is a tasty approach to one of our favorite foods. Take a slice of French bread and cut it in half. Spread tomato sauce over the bread and scatter mozzarella cheese on top.  Add any other toppings you prefer such as pepperoni, olives, peppers or basil and put it in the oven on 375 degrees for about 8-10 minutes or until the cheese is melted and the bread is crisp.
