The semester is finally coming close to its end and nothing compares to the memories made with friends and family during Thanksgiving break surrounded by a variety of cuisine. Anyone would agree that desserts are what everyone looks forward to indulging in the most. Here are three super adorable Thanksgiving desserts inspired by Pinterest that will have everyone wanting even more!

Peekaboo Pumpkin Pound Cake

What You’ll Need

For the pound cake:

  • 1 (14-ounce) box pumpkin bread mix
  • 1 (16-ounce) box pound cake mix
  • orange food coloring
  • Pumpkin cookie cutter

For the Brown Butter Icing:

  • 8 tablespoons butter
  • 3 ½ cups powdered sugar
  • 3 tablespoons evaporated milk
  • 1 teaspoon vanilla
  • ½ cup chopped pecans (optional!)

Method:

  1. Prepare the pumpkin bread mix according to the directions on the box. Add as much food coloring to end up with a nice orange color.
  2. Bake this mixture but remove the cake from the oven approximately 8-10 minutes earlier than the approximate time it should be baked for.
  3. While you let the cake cool, mix up the pound cake batter according to the directions on the box. Set this mixture aside for now.
  4. When the pumpkin bread has cooled, cut the bread in even large slices and use the pumpkin cookie cutter to create cute little pumpkins
  5. Align all the pumpkins in the center of a lightly greased and floured loaf pan.
  6. Pour the pound cake batter over the pumpkin cutouts but try not to overfill the pan (you will end up with extra pound cake batter.) Bake according to the directions on the box.
  7. Prepare the icing by putting powdered sugar in a mixing bowl. In a saucepan, melt the butter. Boil and stir until this browns with dark flecks forming on the sides and bottom of the saucepan.
  8. Pour the melted brown butter over the powdered sugar. Add evaporated milk and vanilla. Stir this mixture until it’s creamy. If the mixture is too runny, try adding more powdered sugar. If it’s too stiff, add more evaporated milk!
  9. Ice the cake once the cake has cooled and add chopped pecans for additional flavor.

Turkey Cake Pops

What You’ll Need:

  • Your choice of cake mix
  • ½ cup cream cheese frosting
  • 2 packages chocolate candiquick candy coating
  • 2 or 3 boxes Ritz crackers
  • 1 bag candy corn
  • Heart and candy eye sprinkles
  • Lollypop sticks
  • Styrofoam block (or something to set the cake pops in to dry)

Method:

  1. Bake the cake mix as directed on the box
  2. Crumble the cake into a large bowl and add the frosting. Mix thoroughly and chill this mixture for approximately 2 hours in the fridge.
  3. While this mixture chills, melt the chocolate and dip the crackers. Place the crackers on wax paper and attach 4 pieces of candy corn on the top edge of the cracker. Let these dry.
  4. Roll the cake mixture into about 1 inch sized balls and place them on wax paper. Insert a lollipop stick into each cake pop ball.
  5. Dip the cake pops into the chocolate and press a candy corn on the center of the cake pop to form the nose
  6. Attach the eye sprinkles and the heart sprinkle upside down below the candy corn
  7. Press and hold the chocolate-coated cracker against the back of the turkey’s head for about 15 seconds. Place the cake pop in the block to dry.

Pilgrim Cupcakes

What You’ll Need:

  • Cupcake mix
  • Brown cupcake liners
  • Vanilla icing
  • Cocoa powder
  • Chocolate to melt
  • Large marshmallows
  • Chocolate coated cookies
  • Icing for decoration
  • Toothpicks

Method:

  1. Bake the cupcakes according to the directions on the box.
  2. Melt chocolate in a saucepan (be careful not to have it on high heat, it will have a burnt-like taste to it!) Coat each marshmallow in chocolate and place it on the cookie.
  3. Place this in the refrigerator to set. Mix a small amount of cocoa with the vanilla icing and ice the cupcakes with just enough icing for the pilgrim hat to stand
  4. Place the hats on top of the cupcakes and decorate the cupcakes however you’d like!
