Snapshot: How to accidentally make 60 Cupcakes.

In my scriptwriting class, we’re encouraged to bring in some kind of baked good to share, and last week I decided I was going to blow everyone away with my mad cupcake skills. I adapted this recipe to make it vegan http://www.bbcgoodfood.com/user/1871966/recipe/oreo-cupcakes with some dairy free margarine, soy milk and egg replacement – and then tripled the mixture because the recipe states that it only makes 12. So that should’ve been 36 cupcakes, right? Just enough for my class, and a few extra as a treat to my housemates. But nope! Somehow it made 60! So many cupcakes! But as my friend said, this was the opposite of a problem. 60 became 0 in less than two days!
