4 Easy Muffin Recipes for the Busy Collegiette

Breakfast should be everyone’s favorite meal of the day…especially if muffins are involved! Who doesn’t love muffins? I’m here to help you with some super easy recipes so that you can get your day started the right way.

  1. Chocolate Chip Muffins

Chocolate Chip muffins are a classic (and my personal favorite) type of muffin. Here’s a very easy recipe to follow to make this ~delish~ treat: The ingredients needed are:

  • 2 cups of all-purpose flour
  • ½ a cup of white sugar
  • 3 teaspoons of baking powder
  • ½ a teaspoon of salt
  • ¾ cup of milk
  • 1/3-cup vegetable oil
  • 1 egg
  • ¾ cup of mini semisweet chocolate chips
  • 3 tablespoons of white sugar
  • 2 tablespoons of brown sugar First, heat the oven to 400 degrees and grease the bottoms of 12 muffin cups or line them with baking foil.  In a medium bowl, combine flour, 1/2-cup sugar, baking powder, chocolate chips, and salt and mix them all together.  In a small bowl, combine milk, oil and egg and blend them together.  Add the dry ingredients all at once to the wet ingredients and stir just until the dry ingredients are moistened (the batter will be lumpy, don’t worry.) Then, fill the muffin cups 2/3 of the way. Sprinkle the tops of the muffins with a combination of 3 tablespoons of white sugar and 2 tablespoons of brown sugar before baking.  Bake the muffins for 20 to 25 minutes (or until an inserted toothpick comes out clean). Let them cool for a few minutes and then enjoy 

    Pumpkin Muffins Add a little spice to your morning with some pumpkin muffins… 

The ingredients needed are: 1. 1 (18.25 oz.) package of yellow cake mix 2. 1 can of pumpkin puree (15 oz.) 3. 1 teaspoon of ground cinnamon 4. ½ teaspoon of ground nutmeg 5. ¼ teaspoon of ground cloves

First, preheat the oven to 350 degrees and grease 12 muffin cups or line with baking cups.  In a large bowl, mix together the cake mix, pumpkin puree, cinnamon, nutmeg, and cloves until it’s smooth.  Spoon equal amounts of the mix into the muffin tin and bake for 20 to 25 minutes (or until an inserted toothpick comes out clean.)

3. Banana Muffins You’ll go bananas for these muffins! Here are the ingredients you need to make these muffins: 1. 3 large bananas 2. ½ cup of white sugar 3. 1 egg 4. 1 teaspoon of baking soda 5. 1 teaspoon of baking powder 6. 1-½ cups of all-purpose flour 7. 1/3 cup of melted butter 8. ½ teaspoon of salt

First, start by preheating the oven to 350 degrees and mashing the bananas.  Then, add the sugar and the slightly beaten egg.  Stir in the melted butter, and then the dry ingredients.  Spoon the batter into a greased or lined muffin pan and bake for about 20 minutes. If you’re feeling it, chocolate chips and nuts can also be added.

Cinnamon Streusel Muffins Start your morning with these sweet muffins.  

The ingredients needed are: 1. 1 cup of all-purpose flour 2. ¼ cup of granulated sugar 3. 1 teaspoon of baking powder 4. ¼ teaspoon of ground cinnamon 5. ¼ teaspoon salt 6. ½ cup of milk 7. 1 egg (lightly beaten) 8. 3 tablespoons butter (melted) Topping: 9. ¼ cup of all-purpose flour 10. 2 tablespoons brown sugar 11. ¾ teaspoon ground cinnamon 12. 2 tablespoons of butter (softened) First, preheat the oven to 350 degrees and either spray or line the muffin tin for 6 muffins.  In a large bowl, combine flour, sugar, baking powder, cinnamon and salt.  In a small bowl, whisk milk, egg and melted butter until it’s well blended.  Stir the wet ingredients into the dry ingredients, making sure not to over mix.  Divide the batter into the muffin tins and then make the topping.  Combine flour, sugar and cinnamon, and then cut in the butter until the mixture is crumbly.  Then sprinkle on top of the muffins and bake 16 to 18 minutes, or until golden brown.
