Recipe of the Week: Quinoa Concoction

So the Christmas period is officially over and now comes the time to get back on track. New Year slim downs, detoxes and crazy exercise regimes are being put in place everywhere. For me, the most important thing is to get back into a eating a healthy, balanced and nourishing diet.

Habits are easy to break and hard to put back together, but your body is more than likely begging for a clean slate. Fill your cupboards with whole foods, fruit and veg and keep hydrated. This week is a recipe I threw together using just seven ingredients and tastes brilliant. After a month of endless turkey dinners and leftovers, I wanted something meat free. I call it the quinoa concoction…

Ingredients:

  • Quinoa
  • Mixed beans/lentils
  • Cherry tomatoes
  • Sweet peppers
  • Baby spinach
  • Turmeric (optional for flavouring)
  • Coconut Oil (for cooking)

Method:

  • Boil a pan of water and throw in the quinoa, leaving it to simmer for 10 minutes. Whilst cooking, sprinkle turmeric into the water for some warm, earthy flavours. Turmeric is also great for any bowel inflammatory.
  • Chop the sweet peppers and tomatoes into halves.
  • Heat a teaspoon of coconut oil in a pan. I only ever cook with coconut oil, full of good fats and classed a superfood, it’s the best thing you can cook with. Once melted, throw in the peppers, tomatoes and lentils.
  • Keep stirring the quinoa. Once all the water has been absorbed, it is ready to eat.
  • Chuck the baby spinach into the pan in the last few minutes. Then add the quinoa into the frying pan and fry all the ingredients together for 1-2 minutes.

 

Ready to serve!

This meal takes no longer than 10-15 minutes to prepare and cook. The ingredients are cheap, nutritious, colourful and delicious. It’s the perfect way to start eating right again. Enjoy!
