Recipe of the Week: Healthy Raw Millionaire Shortbread

Craving something sweet to get you through all your deadlines? How about this amazing raw millionaire shortbread! Don’t be fooled by its deliciousness though, this recipe is completely healthy! Its as easy as 1, 2, 3.

Ingredients 

Bottom layer :

  • 2 cups of flour (suggested: oat flour) 
  • 2 tbsp. coconut oil 
  • 2 tbsp. maple syrup 

Middle layer: 

  • 1 + ¼ cup dates (soak for ease)
  • ½ cup water 

Top layer: 

  • ¾ cup cacao powder 
  • 4 tbsp. coconut oil 

Instructions: 

  1. Mix the ingredients for the bottom layer together and press into a 13x18 lined baking tin. Leave to set in the freezer for 10 minutes. 
  2. In the meantime, blend the dates and water until you get a creamy, caramel-like consistency. Spread the mixture on top of the bottom layer and place in the freezer for 1 hour. 
  3. Finally, mix together the cacao power and the melted coconut oil until there are no lumps. Pour the sauce over the other two layers and leave to set in the freezer for 2 hours. 

 

Cut into squares (or not!) and enjoy!
