Easy Summer Lunch: Mediterranean Couscous
It’s getting to that sunny, delicious time of year – barbecues, ice creams, strawberries…
Common knowledge suggests that when it’s hot we eat less – or eat lighter and ‘cooler’ foods. Not many reach for a hot pie in the middle of a sunny July!
This is a Mediterranean inspired dish which is super easy to throw together for lunch. Its versatility also means you can mix and match your ingredients – if you don’t have any of what we’ve listed below, no sweat! (Or there probably is some sweat, this time of year)
Ingredients:
- Red (or white) onion
- Garlic (one clove is plenty)
- Red and green pepper
- Courgette
- Brocolli
- Carrot
- Approx. 60g Couscous
- Salt and pepper for seasoning
- Olives for garnishing
- Vegetable stockcube
Three easy steps:
1. Saute the onion, garlic, pepper, courgette, brocolli and carrot
2. Pour boiling water (approx. 200ml) mixed with half a stock cube over the couscous on a medium heat
3. Once the couscous has cooked (it shouldn’t be too sticky), mix together with the vegetables, and garnish with olives
Voila! A simple, easy dish made in no more than half and hour. Happy munching!
