This article is written by a student writer from the Her Campus at Duq U chapter.

Are you looking for a way to celebrate your midterms being over? Or maybe you just need a way to destressfrom your online classes? Baking is a great way to relax and get that me-time you have been wanting! Now that it’s Fall season and you’re planning that trip to the pumpkin orchard, you have to try this new mini apple crunch pie recipe to make use of those fresh apples you just picked!

These mini apple crunch pies are a perfect way to treat yourself after a long week of online classes. If you want to try something, other than pumpkin flavored treats, that you’ll want to keep having again and again, get out your pie pans and start cooking!

INGREDIENTS

  • 1 Pie Crust
  • 2 apples, preferably medium sized (cut them into small slices)
  • 1/3 cup brown sugar
  • 1/3 cup white sugar
  • 4 tsp. flour
  • 1 tsp. cinnamon
  • 1/4 tsp. salt

FOR THE TOPPING (optional)

  • ½ cup rolled oats
  • ½ cups all-purpose flour
  • ¼ cup of brown sugar
  • 6 tsp. unsalted butter

INSTRUCTIONS

  1. Preheat the oven to 375 degrees Fahrenheit. Line your pie pan or bowl with the pie crust and place in freezer.
  2. Cook your apples and brown sugar on medium heat for about 12 minutes or until bubbling.
  3. Drain the liquid that is left and add the flour, sugar, salt, and cinnamon to the now cooked apples and brown sugar.
  4. Stir it all together.
  5. For the topping (optional): Mix the oats, flour, and sugar together.
  6. For the topping (optional): Now add the butter and mix to get clumps.
  7. Get the pie crust and add your ingredients to your pan. If you made the topping, then place the clumps on top. Make sure the clumps are in place before baking.
  8. Bake the pie for about 25 minutes. Depending on the oven, it may take a little more or a little less. When it turns golden brown, it’s done.
  9. Take the pie out of the oven. Place toothpicks in the pie and add foil on top.
  10. Bake for another 13-15 minutes, again, depending on the oven. The pie should be bubbling when done.
  11. Let the pie sit for about 10 minutes before eating and enjoy!

Match this recipe with your favorite fall Starbucks drink, and you’ll be all set!

Hi! My name is Hailey, and I’m an early childhood education major who is also working towards a graduate degree in reading and literacy education. In the future I’d love to not only be a teacher, but also an editor for a book publishing company.
Hey I'm Lauren! I'm a PR & Advertising major at Duquesne University and I am one of the Founding Campus Coordinators! On campus, you'll most likely find me sprinting from place to place because I am rarely on-time for anything (oops!) Off-campus, you'll find me at any and every coffee shop in and around Pittsburgh!
