Monday Meals with Monica: Roasted Veggies

It’s Monday Meals with Monica! You need some healthy, easy sides to accompany your main dishes. Here’s how to make delicious roasted vegetables.

 

Ingredients:

  • Two handfuls of baby carrots
  • 6 baby portabella mushrooms, sliced
  • 1 pepper, sliced
  • ¼ broccoli head, sliced
  • ¼ onion sliced
  • 2 Tbsp Garlic powder
  • 1 Tbsp Rosemary
  • 2 Tbsp oil
  • 1 tsp ground black pepper

 

Place all ingredients, mixed, onto a cookie sheet. Bake in oven for 20 minutes at 350*.
