Monday Meals with Monica: Pesto

It’s Monday Meals with Monica! I told you how to make breaded chicken last week, but what about some pesto to put on top of it?

 

Ingredients:

  • ½ cup Olive Oil
  • 3 cloves of garlic
  • Two handfuls of basil
  • ½ tsp salt
  • 1 tsp pepper
  • ¼ cup pine nuts (can roast to make them have a richer taste)
  • ¼ cup parmesian cheese

 

Blend everything together in a food processor. Add more oil if too thick. If you’d like full pine nuts rather than chopped within the pesto, fold them in after blending everything else.
