Monday Meals with Monica: Pancakes

It’s Monday Meals with Monica! What better way to start off the week than to have some pancakes with breakfast? They’re homey and happy!

 

Ingredients:

  • 1 ½ cup flour
  • 2 tsp baking powder
  • 1 Tbsp sugar
  • ½ tsp salt
  • 1 ½ c milk
  • 1 egg
  • 3 Tbsp oil

 

Mix all of the ingredients, trying not to leave any lumps in the batter. Heat a skillet on medium heat, and add a slice of butter or some Pam to ensure the pancakes won’t stick. Depending upon the size of pancake you want, the pan can hold between 1 and 4 pancakes at a time typically. Cook one side until the top starts to bubble. You’ll also see the edges of the pancake lift a bit. Flip the pancake over and cook the other side.
