It’s Monday Meals with Monica! Got some leftover protein? How about a lot of vegetables you don’t want to go bad? Let’s make some fried rice! With this recipe, ratios of vegetables and proteins are up to you. You are able to add other things or just a few of those mentioned. I am going to list some options, but the main necessary ingredients are part of the ingredient list.

 

Ingredients:

  • 1 ½ cup water
  • 1 tsp oil
  • 1 cup rice
  • Soy sauce to taste
  • Red pepper flakes to taste
  • Sesame oil to taste

 

Optional ingredients:

  • Protein of your choice cooked (chicken, beef, pork, tofu, etc)
  • Carrots
  • Broccoli
  • Mushroom
  • Spinach
  • Tomato
  • Onion
  • Garlic
  • Peppers
  • Egg
  • Peas
  • Green beans
  • Corn
  • Celery

 

Bring water and oil to boil in a small pot. Stir in the rice, let the water return to a light simmer and stir again. Keep rice covered. It may take up to 30 minutes for the rice to be complete.

 

In a pan, add choice of ingredient to warm and cook to preference. Add rice once it is finished cooking. Add soy sauce and other items to taste.
