Monday Meals with Monica: Banana Muffins

It’s Monday Meals with Monica! I have been using older bananas to make banana bread as well as things like banana pancakes. I wanted to mix things up this week though and try some banana nut oat muffins.

 

Ingredients:

  • 1 cup and ¼ cup oatmeal
  • 1 ¼ cup flour
  • ½ sugar
  • 1 ½ tsp baking powder
  • 1 tsp baking soda
  • 2 Tbsp and 1 Tbsp cinnamon
  • 1 Tbsp nutmeg
  • 1 egg
  • ¼ c oil
  • 1 Tbsp vanilla
  • 3 ripe bananas mashed
  • 2 Tbsp brown sugar
  • 2 Tbsp melted butter
  • ½ cup and ¼ cup chopped walnuts

Mash bananas in a bowl. Add 1 cup oatmeal, flour, sugar, baking powder, baking soda,2 Tbsp cinnamon, nutmeg, ½ c walnuts vanilla, and egg. Mix. Add oil and create a dough. Pour into muffin tins, filling them about halfway. Mix in a separate bowl brown sugar, remaining oatmeal and walnuts, as well as melted butter. Sprinkle some of topping mixture onto each muffin. Bake at 375* for 20 minutes.
