The Best and Easiest Summer Cake For Anytime of the Year

This past summer, I stumbled upon a Swedish influencer named Matilda Djerf who wasn’t just a fashion icon, but also had a hobby for baking. On her instagram, she often shares some of her homemade recipes that are perfect for summer. Now, I know what you’re thinking: isn’t Fall already here? The answer is yes, but summer can be all year long no matter the season, with the right recipes of course! I’m warning you now, though, some of the conversions may be a little odd since the recipe is originally in grams, which is common for Swedish recipes. So, I converted grams to cups, tablespoons, and teaspoons to make it easier for you! But just stick with it; it’s worth it, trust me!

You will need:

  • 4 eggs
  • 1¾ cups + 2 tbsp sugar
  • 2 ½ cups flour
  • ¾ cup + 1 tbsp of water
  • 2 tsp baking powder
  • 16 oz. container of fresh strawberries 
  • Vanilla frosting 
  • Cool-Whip

First, preheat your oven. The recipe tells you to preheat your oven to 175 degrees Celsius, but I have converted the temperature for you! It converts to 347 degrees Fahrenheit, but you can set it between 345 or 350 degrees instead. I recommend setting it at 345 degrees and checking every now and then to make sure it bakes correctly. 

Second, you will need to whisk the eggs and sugar together until a fluffy consistency forms. In a separate bowl, combine the flour and baking powder together. Then combine both wet and dry mixtures together while adding the water.

Third, pour the mixture into a large cookie sheet and bake for 25 minutes.

Fourth, once the cake is out of the oven, let it cool. After that, use two medium-sized plates to create two separate round cake layers.

Fifth, spread vanilla frosting across the top of one of the layers. Then, add sliced strawberries to the top and place the other cake layer on top of it. Next, combine a pinch of sugar, Cool-Whip, and some mashed-up strawberries in a separate bowl. This mixture will go on the very top layer of the cake. 

Sixth, ice the entire cake covering it with the rest of the Cool-Whip. Finally, top it off with a pile of the most perfect, round, and fresh strawberries you can find! 

And there you have it, the best and easiest summer cake to make! This cake doesn’t specifically have to be made in the summer. You can enjoy it any time of the year! It’s a great crowd pleaser and an inexpensive cake to make. Share this with your friends and family, and I’m sure they will love it just as much as I do!
