So, you’re a vegetarian. I know how you’re feeling with Thanksgiving coming up. As a vegetarian myself, “turkey day” is definitely more of a “three rolls and too many mashed potatoes day.” The worst part about being a vegetarian, for me at least, is feeling like you’re an inconvenience to the host or hostess. While everyone enjoys their turkey and side dishes with meat, you’re already up for you second helping of a subpar salad. So, this Thanksgiving, be sure to bring one or two of these dishes! FOR A SIDE DISH
Well known for her career on The Hills, American television personality, fashion designer and author Lauren Conrad has several vegetarian suggestions for you this Thanksgiving! Her Recipe Box section on her blog features three unique vegetarian options, including Olive Oil and Roasted Garlic Mashed Potatoes, which are not only delicious but also—wait for it—VEGAN! Say goodbye to those plain safety potatoes you usually reach for and bid adieu to the calories! This vegan recipe excludes butter and milk, which often add calories as well as bloating (bleh!).

FOR A MAIN ENTRÉE
On my quest for more veg-head friendly recipes, I went to Pinterest with high hopes. As per usual, Pinterest did not disappoint! This recipe is made in a pumpkin. I repeat, A PUMPKIN. Inside the gargantuan festive fruit lie layers of cheesy creamy pasta and squash with the light seasoning of rosemary. Add garlic for extra flavor! Not going to lie to you, it’s loaded with calories. Luckily, I heard calories don’t count on Thanksgiving, so you’re good! Besides, everything is okay in moderation. Check out the recipe here!

A LIGHTER MAIN ENTRÉE
If you’re trying to keep things light even on Thanksgiving, I have so much respect for you. And, I also have a great recipe! This mushroom shepherd’s pie is only 130 calories … which means more room for dessert! Also, if you choose to use egg substitutes, this entrée is entirely vegan. If you’re not a huge fan of mushrooms, don’t worry! You can’t taste them because of all of the seasoning. If you don’t trust me, you can substitute 6 veggie burger patties, and crumble them up, to give the pie its texture.

DESSERT
Mostly all desserts are vegetarian, so here’s a low-cal vegan option and one of my personal favorites! P.S. Oreos are vegan (which is slightly concerning…). These adorable little squares are vegan, and addicting. Be cautious. You can make about nine squares in only 45 minutes. Although there are quite a few ingredients, the taste is unbelievable.
