If you’re in need of a rich, indulgent pick-me-up, look no further. This is a simple and straightforward recipe yet is a guaranteed crowd pleaser! Switch the dark chocolate for milk if you prefer a creamier mousse, or take the orange out for a more basic recipe. Or, of course, keep the flavours strong if you want a tasty, classic dessert.

Makes four mousses (large ramekins)

Ingredients

·      250g/8oz dark cooking chocolate

·      25g/1oz butter, cubed

·      4 free-range eggs whites only

·      90ml/3½fl oz double cream

·      40g/1½oz caster sugar

·      Juice of 2 oranges

·      Zest of 1 orange

·      Small peelings of 1 orange

Method

1.    Break up the chocolate and put it in a heatproof glass bowl, with the butter, over a pan of boiling water on the hob. Melt the chocolate, stirring occasionally, until it is smooth. Set aside for the time being.

2.    Whisk the egg whites in a large mixing bowl until soft peaks form and the mixture is stiff.

3.    Add half the caster sugar and whisk thoroughly, then add the other half of the caster sugar, whisking again until it is combined with the egg whites.

4.    In a separate bowl, whip the cream until stiff peaks form.

5.    Add the melted chocolate, along with the orange juice and zest, and fold into the egg mixture carefully, until thoroughly combined.

6.    Then add the whipped cream, again folding gently until thoroughly combined.

7.    Spoon the mousse mixture into four large ramekins (or bowls, or a large dish if you don’t have ramekins), and smooth on top.

8.    Add the orange peel (as seen in the pictures) on top for decoration.

9.    Chill in the fridge for at least four hours before serving.
