My Most Common Apartment Meals

For the last two years, I’ve lived in an off-campus apartment. It’s been awesome, but one of the biggest issues was getting used to cooking for myself and my roommates. While I like to believe I’m a lot better than the dining hall offerings (that’s an article for a current underclassman to write about), finding meals that are affordable, accessible, and tasty isn’t always easy.

Luckily, I’ve compiled a list of recipes that I repeat often and are always a hit with me and my roommates. If you’re looking for meal ideas, give these a try! I’m not vegan, but I am trying to eat a lot more plant-based meals, and many of these recipes are plant based already or can be easily modified. Happy cooking!

The Recipes:

Black Bean Quesadilla

Coconut Curry Chickpeas

Creamy Tortellini Soup

Stuffed Sweet Potatoes

Thai Noodle Salad
