One of the things that I miss most when I am at school is baking. Yes, I have a kitchen here, but I do not have the endless supply of kitchen utensils and ingredients that I can find in my mom’s kitchen at home. As fall comes around and the holidays approach, I start craving all of the baked goods I get when I am home. So for all of you who are in the same boat and are craving a little taste of home, here is the easiest pumpkin muffin recipe ever!

Ingredients:

  • Spice cake mix
  • Can of Pumpkin
  • 1 Cup of water

(That’s literally all you need!)

Directions:

Mix the ingredients together and bake according to the directions on the cake box. It’s that simple!

These muffins are so good! My mom and I make them pretty frequently (even when it’s not fall) and they are gone within a day. They are a nice thing to have on hand if you need something to eat on your way to class, are having a fall get together, or just want a delicious snack. Also, they are pretty healthy as well so you don’t have to feel bad about eating five of them at a time. Give them a try. You won’t regret it!
