Here’s a fun fact that not many people know about me: I love baking! But I don’t mean the “Betty Crocker, straight out the bag, just add water” type of baking. I love making things from scratch. One of my favorite family recipes is banana muffins. I promise the ones I make really are the best! In fact, the first time I made it for my roommate, she ate the whole batch and begged me to make more. So, if you love banana anything (or just have a sweet tooth, in general), you have to try these!
Ingredients:
- 3 large bananas (you want them to be super ripe!)
- ¾ cup white sugar
- 1 egg
- ⅓ cup melted butter
- 1 tsp. baking soda
- 1 tsp. baking powder
- ½ tsp. salt
- 1 ½ cup flour
Optional:
- Pecans (I just eyeball these)
- Chocolate Chips (a handful or two will do)
Instructions:
- Preheat oven to 375
- In a large bowl, mash the bananas with a fork until they form a lumpy, liquid texture. Add sugar and beaten egg, mix. Next, add melted butter. Once that is well combined, add baking soda, baking powder, salt, and flour. Mix well.

If you really want to take these muffins above and beyond, add chopped pecans and chocolate chips!

Spoon batter into greased or lined muffin pan and bake for 20 minutes.
