A healthy pancake overload!

Want a healthy breakfast? Here is a fantastic recipe to start the day right and keep you going through those two hour lectures.

Ingredients: 

2 cups oats

1 and 1/4 cups vanilla almond milk

1 large banana

1/2 teaspoon ground cinnamon

1 heaping tablespoon honey

1/4 teaspoon sea salt

1 teaspoon vanilla extract

1 and 1/2 teaspoons baking powder

Instructions:

Place all ingredients, except egg and butter (or coconut oil) in the base of a blender and blend until smooth. Add your egg and pulse a few times until your egg is fully incorporated.Then heat a griddle or a large sauté pan over medium heat and melt a teaspoon or two of butter (coconut oil.) When hot, pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides (about 2-3 minutes per side) and serve hot (If batter becomes too thick to pour easily, add a tablespoon or two of milk).

Now all you need to do is add a topping of your choice!

(NB:Use semi-skimmed milk if you don’t have almond. I have never been able to find vanilla almond milk but, you can get vanilla soya milk from Holland and Barretts, which is yummy in smoothies too!)
