Collegiette Confections: Mini Red Velvatine Cupcakes

Watch out Fairfield boys, your girlfriends may have a new Valentine this February. Every girl on campus is destined to fall in love with these mini red velvetine cupcakes! I would be lying if I said I didn’t have a dessert addiction myself, especially being a baker at heart. However, Sunny Daes just won’t do especially in these frigid temperatures. Therefore it is time to channel your inner Julia Child, take a study break (which I’m sure doesn’t need much convincing) and enter the kitchen.

These bite-size desserts are easy to make without the hefty calorie count. With a little help from my girl Betty Crocker, these satisfying sweets take less than 45 minutes including the time it takes to pop one in your mouth. As a former culinary student, I take the decorations to another level by using piping bags and special icing tips for fun designs. But by filling a plastic bag with icing and cutting a small hole in the bottom corner, you can make pretty swirls to adorn the tops of your cupcakes. My mini red velvatine cupcakes are typically decorated with silver or pink sugar and some of my favorite candies, like M&Ms, but it’s up to you how you want to decorate your minis!

Don’t be hesitant to bake! What’s the worse thing that could happen besides burning down your dorm building? Kidding! Take the risk, be creative- your taste buds will thank you after!
