Food Blog: Chicken Sausage Pesto Pasta

This is the best pasta dish for lunch because the taste is awesome when it’s cold. It can get very inconvenient when you do not have a microwave around. My favorite thing to do is make a whole big batch of this and separate them into containers for lunches on the go. This dish is so satisfying and light at the same time. 

*Serves 2

Ingredients:

2 cups of Rotini Pasta

Garlic, onion, and Sweet Pepper minced

Green onion

3 tbsp of pesto

4 chicken sausage links

chopped mixed nuts

 

1)   In a large pot, fill the pot with cold water and bring it up to a boil. When it is up to a boil, pour in the rotini pasta and cook until al dente.

2)   In a large skillet on medium heat, sauté the garlic, onion, and sweet peppers until translucent. Next, add the sausage and half of the chopped mixed nuts.

3)   Sauté until the sausage turns golden brown. Turn off the heat and pour the content to the drained rotini pasta.

4) While the pasta is hot, quickly add the pesto and green onions to the large pot. Mix well and enjoy!
