Four Amazing Vegan Recipes You Need To Try!

1. Vegan Stuffed Peppers: These babies are delicious, cheap, easy and filling!! What more could you ask for?

What you will need:

1 box of Quinoa (I used a tomato spinach florentine kind)

1 cube of Tofu

1/2 can of black beans

1 carrot (chopped)

1/2 red onion

1 cup of Vegan Mozzarella Cheese

2 Peppers (I used a red pepper and a yellow pepper)

Salt (I used pink himalayan sea salt)

Black Pepper

Oil

Any Veggies you want to add

What To Do:

2 hours prior to making this meal, dry out your tofu (This means to set out in a paper towl so no water is left in the tofu).

Preheat Oven to 350 degrees.

Cut the top of the pepper off and scrape out the inside. Put on baking sheet. Bake for 20 minutes.

While peppers are baking, follow instructions on the box for Quinoa.Make Quinoa

Next heat oil in pan and add the veggies, tofu, beans and cheese. Cook until peppers are done. Add Quinoa in pan and stir,

Once the peppers are done fill with the quinoa tofu mix, top with cheese and bake for 15 minutes!

Viola! 

 

2, Avocado Toast:Super easy and delicious (not to mention healthy)

What You’ll Need:

1 Avocado

1/2 cup of sliced baby bella mushrooms

1 Tomato

Pepper

Salt

2 slices of Vegan Bread

What To Do:

Toast bread. Slice Tomatoes and Avocado. Once toast is done add Avocado, Mushrooms and top with Tomato. Add salt and pepper.

Viola!

 

3. Stuffed Sweet Potato:

What You’ll Need:

1 sweet potato

1 cup brocoli

1 cup cauliflower

1/2 cup vegan cheese of choice

salt 

pepper

 

What to do:

Poke holes in sweet potato with fork and microwave on both sides for 4 minutes each. Next take a small bowl and fill halfway with water. Add broccoli and cauliflower and cover in microwave. Steam for 4 minutes. Cut sweet potato, add veggies, salt, pepper and cheese!

 

Viola!

 

4. Banana IceCream:

What You’ll Need:

2 bananas 

Vanilla extract

Almond Milk

Oreos (optional and yes they’re Vegan)

What To Do:

Cut bananas in small slices and put in a bowl. Freeze for at least an hour before making the icecream. When you’re ready add bananas, a splash of vanilla extract, almond milk into a blender. Blend until thick consistency and add oreos on top if desired! Yum!
