Feeding yourself in college can feel like a full-time job that no one warned you about. Between classes, clubs and attempting to have some kind of social life, figuring out what to eat every day can quickly become overwhelming. The last thing that I want to worry about after a long day is what to make for dinner. It truly feels like the last straw.
Here are some easy dishes that I like to make when I have very little energy:
- Pasta
-
Starting the week off strong, a simple pasta dish is always a reliable option. Boil your pasta, add jarred sauce and throw in whatever you have on hand, like spinach, frozen vegetables or leftover chicken. It takes less than 20 minutes and makes enough for leftovers, which already feels like a win.
- Rice Bowl
-
For something a little lighter, a rice bowl is perfect. Cook rice, add a protein like chicken, tofu or even a fried egg, and top it with vegetables and your favorite sauce. It is one of those meals that looks like you tried a lot harder than you actually did.
- Tacos
-
Tacos are another easy option that can be customized to whatever you are in the mood for. Ground beef, beans or even just roasted vegetables work great. Put everything in a tortilla, add some cheese and salsa and you have a solid meal that feels a little more exciting than your usual routine.
- Salad
-
For a healthier option, a simple salad with protein can be a great go-to. Start with a base like spinach or mixed greens, then add grilled chicken, chickpeas or tuna. Toss in whatever vegetables you like and finish it with a dressing. It is quick, balanced and makes you feel like you have your life together, even if everything else is a little chaotic.
- Stir Fry
-
Stir fry is another go-to that is both simple and versatile. Toss whatever vegetables you have into a pan, add a protein if you want and mix in soy sauce or any sauce you like. Serve it over rice or noodles, and you are set. It is also a great way to use up ingredients before they go bad.
- Sandwich
-
For a low-effort option, a loaded sandwich or wrap can be just as filling as a full meal. Use deli meat, hummus or even just cheese and vegetables. Feel free to add some chips or fruit on the side. It requires almost no cooking and still feels put together.
- Grilled Cheese
-
Finally, having a comfort meal like grilled cheese and soup in your rotation is always a good idea. It is quick, easy and perfect for when you need something warm and familiar after a long day.
At the end of the day, cooking in college does not have to be complicated. Having a few simple meals you can rely on makes everything feel a little more manageable. It is not about making perfect meals every night; it is about feeding yourself in a way that fits your schedule and your energy. And honestly, if you made something and ate it, that is already a success.
