Cooking with Christine: Green Power Pasta

This article is written by a student writer from the Her Campus at UC Irvine chapter.

If you are looking for an easy dinner recipe, then look no further. This week’s cooking blog features Green Power Pasta! Not only is it a great way to use the vegetables sitting in your refrigerator, but it is also a delicious, healthy meal.

In order to make Green Power Pasta, you will need:

2 cups of broccoli

¾ cup of frozen peas

1 ½ cups of spinach

2 tablespoons of pesto sauce

¼ box of pasta noodles

Start by heating your pot on a medium flame. Add in the broccoli and ¼ cup of water into the pot. Let it steam for 5 minutes. Next, add in the peas and spinach. If the pot gets too hot and starts to burn your greens, add a little bit of extra water. When your greens are cooked, add in the pesto sauce and let it cook on a low flame for 5 to 7 minutes. In the meantime, bring a pot of water to boil and add in your pasta noodles. It will take approximately 12 minutes to cook.

When your pasta is cooked, drain out the water and place it on a plate alongside your pesto greens. It’s that simple! Enjoy your Green Power Pasta!
