How to Make Vegan Dark Chocolate Coconut Bites

Eating healthy is not always the easiest, especially when you are constantly on the go. One thing that I have found to be a game-changer for eating healthy on the go is preparing meals and snacks at the beginning of each week. This way, you don’t have to waste time during the busy school week thinking about what you are going to eat. Experimenting with different ingredients and creating new recipes is also a fun way to spend any free time you may have! Recently, I came up with a simple, 4-ingredient recipe for vegan dark chocolate coconut bites. Follow the steps below and enjoy!

Step 1: Gather Ingredients 

The ingredients you are going to need are: peanut butter, coconut shreds or flakes, any form of dark chocolate, and coconut oil. In addition to these ingredients, you’ll need a blender or food processor.

Step 2: Melt  

Melt the peanut butter, dark chocolate, and coconut oil, which will act as a glue for the coconut shreds.

Step 3: Blend

Put all of the ingredients into the blender and blend! You may need to stop bending every couple of seconds to manually stir the mixture with a spoon. 

Step 4: Roll

Roll the mixture into tiny bite-sized bites and lay on a piece of foil or parchment paper. 

Step 5: Top

Top the bites with any ingredients you want such as more coconut shreds, chia seeds, nuts, etc.

Step 6: Pack for the week

Place the coconut bites into plastic bags and store in the refrigerator. Grab a bag of these delicious treats in the morning before your busy day and enjoy a healthy snack wherever you go! This is not only a great way to get yourself to eat healthier, but it saves so much money that you would otherwise spend on snacks! 

Another tip: add some protein powder to the mixture to turn these into a pre- or post-workout snack!
