Guess what, collegiettes™.
I decided to finally give cooking a shot–real cooking that is. Not baking cupcakes, not toasting bagles, not making cereal and not warming up microwave dinners. Real, legit cooking!
One of the dinner meal options for the Jump Start Diet is Curry-Yogurt Salmon. Super delish and only 400 calories. Winning meal right there, right?
The recipe calls for mixing 2 oz. of nonfat plan Greek yogurt with ¼ tsp of curry powder and black
pepper. I put a little, actually a lot more curry than the recipe called for. I love spicy food, sorry!

Next, lather those puppies up in the yogurt mixture and broil them on a baking sheet covered in cooking spray. In about 12-15 minutes, the fish should be cooked thoroughly. I didn’t actually bake it in the open, I cooked it in a pan over the stove because for some reason, that part of the recipe only occurred to me after I had it in the stove.

Squeeze a little lime juice over the lime and zan-za-bam… you have a gorgeous plate of salmon. SELF suggests serving the salmon with 2 cups of steamed broccoli and ½ cup cooked brown rice. I actually love, love, love broccoli but didn’t have any so I steamed a bag of veggies, and served it with jasmine rice.
