Today is the first Friday of Lent, and as you may know I will not be eating meat every Friday until Easter.
A recent SELF article wrote that, “skipping meat on Fridays is a simple, sneaky way to reduce your salt and saturated fat intake. The best part is that this doesn’t mean you have to eat bland, boring meals.” 
In the past, sacrificing meat once a week always seemed to be a huge deal, but now that I’m on a healthy, happy journey to dropping that “freshman 15” weight, this is just another excuse to try new recipes and meals included with the diet as well!
Abstaining from meat doesn’t affect my breakfast since I have been eating switching between quick, easy meals like waffles and oatmeal. For lunch, I tried Amy’s Kitchen Light single serve spinach pizza. Oh my goodness, it was so yummy. I only grabbed one box at the grocery store because it didn’t look that great judging by the picture on the box, but I was mistaken. Loved it!
For dinner I will be trying a recipe from the Jump Start Diet: curry-yogurt salmon with brown rice. I mean, my mouth is watering just writing what I’m going to be eating. I can’t wait to experiment with my cooking and plan to blog about it tomorrow. Wish me luck!
