As those following my blog may know, I am an emotional eater. What some of you may not know is, I’m an emotional baker too. When I detailed my situation last semester where being stalked by another student led me to eating Oreos for two weeks straight as I waited for the “no contact agreement” to finalize, I didn’t mention the day I spent hours baking over 12 dozen chocolate chip cookies.

Yes. I know it sounds crazy. But when I shift into emotional baker mode, I actually don’t eat what I make all that much. I give it all away. I ended up mailing packages of cookies to older friends who had already graduated and giving some of the cookies to people who worked to keep me safe during that time. People called my treats “stress cookies” and joked that it was the upside in a terribly situation.

I love baking. I love cooking. It takes my stress and let’s me take it out on an onion I’m dicing or the bowl of cookie dough I’m beating the life out of.

So, you may be wondering: how can a lover of all things cooking and baking still get the simple pleasure of smelling those cookies in the oven or seeing the joy on the face of friends when tasting my culinary creations if I’m dieting?

Thank GOD there is Truvia™. Made by the stevia plant, one packet of Truvia™ natural sweetener provides the Picture13 1same sweetness as two teaspoons of sugar. And with the different recipes on their website, there’s something for every sweet tooth or special occasion.

So far I’ve made (and given away as gifts) the oatmeal raspberry bars, fudgy brownies, chocolate chip cookies and apple crisp. All were beyond delicious and perfect for the occasions (watch my video montage about it!).

My next creation? I’m hoping to try the Chocolate Tiramisu Mousse Cake. I promised a couple of my friends who saw the recipe that I’d make it for our next get together (which will be my Healthy But Delicious party. If you live near Appalachian State University, leave a comment and I’ll let you know how to go!).

I’m having a great time baking without feeling like my entire diet is spoiled. My friends love the treats too and can hardly taste the difference. And it’s not just baked goods! Truvia™ ‘s site even has recipes for savory dishes and yummy cocktails. I can’t wait to try more Truvia™ recipes.

Have you tried any of the Truvia recipes I’ve featured in my blog? Let me know how it turned out! Email me at NikkiRoberti@HerCampus.com or tweet me anytime @Nikki_Roberti.
