I had a fantastic weekend. There was the perfect mix of fun and relaxing. It’s been a long time since I had a day to just be lazy. After a delicious brunch on Saturday, where I had my first crepe, I was able to just chill. I had to ice my ankle because I have a very minor sprain and didn’t want to have any issues on today’s run. Besides having to hold my poor foot in a bucket of ice for 10 minutes at a time, I read and cooked. I was having such a nice time and it was rainy and cold so I decided to skip the sidewalk sale. I might check it out tomorrow but I have a lot of work to do, so we’ll see.

While relaxing I was catching up on Smithsonian magazine. I subscribe to far too many magazines (see below) and am backlogged thanks to work and school, but when I find time to read Smithsonian is my first choice. It’s an incredible publication filled with science, travel, history and environmental journalism. Reading Smithsonian makes me realize how incredible our Earth is. We’re surrounded by wonderful things and the magazine’s journalists connect us to places, people and cultures we wouldn’t otherwise know or experience.

I would love to write for Smithsonian. I want to travel and research, and I love history and politics. I was particularly struck by a few pieces from the last issue. A story about Cleveland highlighted the city’s decline, and the potential for its renewal. If you’re a bit nerdy, you’ll love this science story. The magazine is filled with gems.

I had decided to stop or at least take a break from writing and photographing food. After all this is the Earth lovers challenge, not the food lovers showcase. But I made a wonderful dinner tonight and had to share it with you (see below). I used the rest of the peppers and onion from the pasta. I threw in extra spaghetti because one box isn’t enough for the two of us. I added that to Mac and Cheese and then put extra cheddar cheese in. It was fantastic!
