Five Pumpkin Recipes for a Cozy Fall

If anyone knows me, they know that I am a vegetable and fruit fanatic; I do not discriminate when it comes to the tasty creations from the ground. Now that autumn has officially arrived, I can spread my fresh produce cheer with a certain special and oh-so-popular gourd. That’s right, I’m talking about the pumpkin! Here are a few ways to eat this delicious fruit!

 

1.Baked Pumpkin Seeds

 

A childhood favorite, baked pumpkin seeds. If you are the creative person and want to carve some pumpkins this holiday season, make sure you save those seeds! Bake those little delicious treats for about 45 minutes at 300 degrees. Those directions were just a guess, so, definitely ask your mom before you do this.

 

2.Pumpkin Pie

 

The most traditional recipe for pumpkin that exists! I heard that Christopher Columbus rode over with a dozen pumpkin pies in his boat. (That was a joke, and let’s not get into the Columbus rant in this article.) Anyways, pumpkin pie is the most delicious gift awarded from the pumpkin gods. Basically, combine pumpkin puree with pumpkin pie spice and vanilla extract, add that to a crust, and bake! Or, my favorite way to make it… buy it!

 

3.Baked Pumpkin

 

This is simple but one of my favorites. I feel like many people overlook the wonderful treasure of baked pumpkin! Slice your pumpkin into cubes, throw it in the oven, and enjoy! Great for a side dish, snack, or even in soup!

 

4.Pumpkin Bread

 

I know you’ve all heard of banana bread, but this is a step up. Combine flour, sugar, baking soda, baking powder, pumpkin pie spice, eggs, and of course, pumpkin, and bake for however long your mom tells you to. It’s easy, affordable and delicious!

 

 

5.The Notorious Pumpkin Spice Latte

You thought Starbucks’ PSL was as good as it gets? Wait until you hear how easy it is to make it at home (or in your dorm room!) Heat up some milk of your choice, I highly recommend coconut milk, then add in some real pumpkin puree. Once you have your first two ingredients smoothly blended, add in some pumpkin pie spice, vanilla extract, sweetener of choice, and two shots of coffee. Voila, a homemade pumpkin spice latte!
