Now that it is fall, soup season is upon us. The days are getting chilly and everyone loves something warm. Nothing beats a warm bowl of soup on a cold, windy day with candles burning and a movie on. Here are some of my favorites for the fall season.

Chicken Noodle

Now, chicken noodle is a classic. It is perfect if you have a cold from the changing seasons. What you will need for this is:

  • Chicken Breasts
  • Carrots
  • Onion
  • Celery
  • Chicken Broth
  • Chicken bouillon
  • Noddles

When you have all these ingredients, you will chop all the veggies and add the chicken into the pot. Boil it all on medium to low heat until the chicken is fully cooked. Boil the noodles of your choice and now you have a delicious soup. This recipe is up for interpretation. You can add or take out what you like.

French Onion

This is a staple. Simple ingredients, but it is always a crowd pleaser. The ingredients needed are:

  • Onions
  • Beef broth
  • Dried thyme
  • 1 bay leaf
  • Gruyere cheese
  • Baguette

All you have to do is cut down as many onions as you would like. Caramelize the onions. Once they are caramelized, add the beef broth. Add as much liquid as you want for soup. Add the seasonings and salt and pepper to taste. Simmer soup for 30 minutes to one hour. Once everything has been simmering, you can spoon it into an oven-safe bowl. Add your baguette and gruyere cheese. Broil on low until the cheese is melted.

Tomato Soup

Homemade tomato soup is perfect paired with a grilled cheese on a fall day. It is simple to make with few ingredients. Here’s what you need:

  • Tomatoes
  • Onion
  • Garlic
  • Bell Papers
  • Heavy Cream
  • Olive Oil

Cut up your veggies and cut the garlic in half. Put all ingredients on a baking sheet and drizzle with olive oil. Season with salt and pepper. Bake at 400 degrees Fahrenheit for around 40 minutes. When finished, squeeze out the garlic and put all veggies into a blender. Blend and then put into a pot. Simmer and add heavy cream. Simmer for around 30 minutes. Serve by itself or with grilled cheese.

Beef Stew

This is a great dinner that you can throw in a crockpot or make on a stovetop. It is simple but delicious. What you will need is:

  • Stew Meat
  • Carrots
  • Potatoes
  • Onion
  • Beef Broth
  • Bay Leaf
  • Thyme

For this, you will sear your stew meat first. Then cut up your vegetables and put it all in a pot together. Once all ingredients are added and the beef is covered completely by liquid, you can season to your liking. Then, if you are cooking all day in a crockpot, put it on low and cook for about 8 hours. The longer, the more tender the meat will be. On the stovetop, you want to cook on a lower heat and cook until the meat is tender and falling apart.
