Scrumptious Au Gratin Potatoes (6 servings)-$1.34 at Target

What to do!

Preheat the oven to 400 degrees F. Grease an 8-cup rectangular baking dish with 1-tablespoon butter. In a nonreactive saucepan, over medium heat, melt the remaining butter. Stir in the flour and cook for 2 minutes. Whisk in the milk and cook until the liquid is slightly thick and coats the back of a spoon, about 4 to 6 minutes. Season with salt and pepper. Remove from the heat. In a mixing bowl, toss the sliced new potatoes with salt and pepper. Fold in the cream sauce and pour into the prepared pan. Sprinkle the top of the potatoes with the grated cheese. Place the pan in the oven and bake until golden brown and bubbly, about 8 to 10 minutes. Remove from the oven and cool for a couple of minutes before serving.

Easy Cranberry Sauce (2 servings)-$1.00 at TargetYou’ll also need sugar.

What to do!

Combine the sugar and water in a medium saucepan. Bring to boil; add cranberries, return to boil. Reduce heat and boil gently for 10 minutes, stirring occasionally. Cover and cool completely at room temperature. Refrigerate until serving time. Makes 2 1/4 cups.

Festive Holiday Meatloaf (4 servings)-You’ll need the following ingredients (Target)-Ground beef ($4)-Bread Crumbs ($3)-Hidden Valley Ranch Dressing Mix ($2)-Eggs ($2)

What to do!

Combine everything together in a bowl and mix. Form into a loaf and place in a baking dish or loaf pan. Bake for 40-45 minutes or until the internal temperature reaches 165°F. Remove from oven and let the meatloaf stand covered for 10-15 minutes before slicing.

Zesty Brussels Sprouts (2 servings)-$3-$4 from the Farmers Market-You’ll also need olive oil and apples, black pepper, thyme and garlic

What to do!

Preheat oven to 375°. Combine apple and Brussels sprouts in an 11 x 7 inch baking dish. Add apple cider, olive oil, minced fresh thyme, salt, and freshly ground black pepper; toss well. Bake at 375° for 25 minutes or until sprouts are tender.

What to do!

Sift together flour, sugar & cocoa powderAdd salt, baking soda, baking powder & mix wellAdd melted butter / oil and mixAdd milk 1 tablespoon at a time & mix well to get a smooth batterPour into a microwave safe bowlPush the chunk of chocolate right into the center of the batter. (Make sure the chocolate doesn’t protrude out of the batter. It has to completely disappear into the center)Microwave on full power for 1-2 minutes. (Microwave time varies. Change accordingly)Let it sit for a minute, unmold & serve plainly or with a dollop of Vanilla Ice cream
