If you’re getting tired of eating at the dining halls and don’t want to spend money eating out, it’s a great time to practice new and easy fall recipes. The following meals are quick, simple, and don’t require extensive cookery knowledge; although, they may inspire you to keep cooking in the future!  

Salt and Vinegar Roasted Potatoes with Smoky Garlic Mayo

A long name for an easy meal. If you have potatoes, salt and olive oil, you’re already halfway there. These potatoes look pretty delicious on a cold day and would be great as leftovers all week.

Margherita Pizza Quesadilla

Quesadillas are arguably one of the easiest and quickest meals to make. They are cheap, simple and delicious. This recipe takes inspiration from Margherita pizza but who’s to say you can’t spice it up? Add some pepperoni? More cheese?

Easy Spaghetti Bolognese

I will admit, this may be the trickiest easy recipe on the list, but only due to the ingredient list. This would be a great meal for a roommate dinner or to meal prep for the week. Try it and see; you might enjoy the challenge!

Chicken Noodle Soup

The perfect meal when you’re sick, tired or need a reminder of home. This recipe would pair well with any creative additions; add in more vegetables, swap out the meat or just add some extra spices.

Tortellini Carbonara

How much more simple can frozen tortellini, bacon and cheese get? This recipe sounds pretty amazing on a brisk October evening.
