When I think of fall, only one thing tops my mental image of the crisp, chilly air and the golden foliage: pumpkin everything.
Pumpkin lattes, pumpkin-colored clothing, pumpkin candies—you know the deal. Last fall, I discovered these quick and easy pumpkin cookies that take the cake.
Ingredients:
- 1 can pumpkin puree
- 1 egg (large)
- 1 cup of chocolate chips
- 1 box of Spice Cake mix, dry
Instructions:
- Preheat your oven to 350 degrees F and line your pan
- Mix the cake mix powder, the pumpkin puree, and one egg thoroughly.
- Add chocolate chips and stir
- Use a large tablespoon of dough to roll out cookies and place them out on your cookie sheet
- Bake for 12-16 minutes and let cool before eating
- Enjoy!
