The Easiest Pumpkin Cookies You’ll Never Wanna Stop Eating

When I think of fall, only one thing tops my mental image of the crisp, chilly air and the golden foliage: pumpkin everything.

Pumpkin lattes, pumpkin-colored clothing, pumpkin candies—you know the deal. Last fall, I discovered these quick and easy pumpkin cookies that take the cake.

Ingredients:

  • 1 can pumpkin puree
  • 1 egg (large)
  • 1 cup of chocolate chips
  • 1 box of Spice Cake mix, dry

Instructions:

  • Preheat your oven to 350 degrees F and line your pan
  • Mix the cake mix powder, the pumpkin puree, and one egg thoroughly.
  • Add chocolate chips and stir
  • Use a large tablespoon of dough to roll out cookies and place them out on your cookie sheet
  • Bake for 12-16 minutes and let cool before eating
  • Enjoy!
