With midterms and finals coming up in the last stretch of the semester, here are some really simple and easy breakfast ideas if you’re on the go, while still staying healthy so you can stay energized.

1. Banana and Egg Pancakes

This recipe is one of my favorites and is super easy. All you need is:

2 eggs

2 bananas (1 banana works too)

Then you mix it all together and this is your batter! You can proceed to make pancakes as you normally would. Top it with your favorite healthy toppings like some strawberries or blueberries.

2.  Breakfast Wrap

This recipe will have you full for a while due to the protein and carbs. It also just tastes amazing. Here’s what you need:

1 whole wheat tortilla

3-4 strawberries

banana

blueberries

natural peanut butter

Just spread some of the peanut butter onto the wrap, lay some cut-up fruit on top, roll it up, and go! You can also pick other toppings if you want!

3.  Greek Yogurt Parfait

I absolutely love Greek yogurt, and you can find pretty good brands at any local super market. The consistency is a little thicker than normal yogurt and it also is packed with protein, which is awesome for a full day of classes and activities for energy. You will need:

½ cup to 1 cup (depending on how hungry you are) of 0% fat Greek Yogurt

1 tbsp Flax seed

1 tbsp Chia seeds

Frozen fruit

1 tbsp Honey or Stevia

Granola (if you choose)

Simply put your Greek yogurt into a bowl, or even Tupperware if you’re in a hurry. Top it with honey, fruit, granola, flax seed, and chia seeds and you’re done! Flax is filled with fiber and chia seeds are awesome for reducing hunger and giving you omega-3. I like to eat mine without the granola but it will still taste awesome!

4. Avocado Toast

This recipe is fairly easy as well. Avocados are filled with healthy fats and will keep you full for hours, making this meal not only quick, but good for a long day. You will need:

½ Avocado

2 slices of toast (bread of choice)

Salt

Pepper

Tomato

Scoop out the avocado half and spread it on your slices of bread. Then, add a slice or two of tomato on each slice, sprinkle on salt and pepper, and you’re finished! So simple, so good! I am all about the avocado rave.
