Easy, Healthy, and Delicious Spring Recipes

Now that it is spring different fruits and vegetables are coming into season. With the warmer weather, lighter, cooler, and more refreshing meals and drinks are at the forefront of mind when grocery shopping and cooking meals. Here are a few of my favorite spring recipes for this season. 

Broccoli and Lemon Orzo Salad 

  • 1 head of broccoli 
  • ½ cup of uncooked orzo 
  • 2 tbsp lemon juice 
  • ÂĽ cup feta cheese
  • 1 tbsp olive oil 
  • 1 tsp oregano
  • 1 tsp garlic powder 

Instructions:

  • Cut broccoli off stems then place in boiling water to stem
  • Cook orzo according to package and add in spices to the pot 
  • drain, then add in broccoli, lemon juice, feta cheese, olive oil then enjoy 

Strawberry Oatmeal

  • 5-6 strawberries
  • ½ banana 
  • ½ cup of oatmeal
  • â…” cup milk of choice 
  • Cinnamon 
  • Drizzle of honey
  • 1 tbsp chia seeds 

Instructions: 

  • Mash banana and place it in a pot with milk, oatmeal, cinnamon, and chia seeds
  • Cook until oatmeal is combined
  • Top with sliced strawberries and honey and enjoy 

Carrot Cake Mini Loaves

  • 2 cups whole wheat flour 
  • 1cup shredded carrots 
  • 1/4 cup melted coconut oil 
  • 3 eggs
  • 1tsp baking powder 
  • 1/2 tbsp cinnamon 
  • 1/2 tbsp cloves 
  • 1/2 tbsp nutmeg 
  • 1/3 cup date syrup 
  • 1/3 cup raisins

Instructions: 

•melt the coconut oil than mix in with eggs 

•after you mix together the wet ingredients add in the flour, spices, baking powder, and shredded carrots 

•mix in raisins 

•pour into a mini loaf pan ( each should be filled about 3/4 of the way) 

•bake for 18-20 minutes at 375f
