Now that it is spring different fruits and vegetables are coming into season. With the warmer weather, lighter, cooler, and more refreshing meals and drinks are at the forefront of mind when grocery shopping and cooking meals. Here are a few of my favorite spring recipes for this season.Â
Broccoli and Lemon Orzo SaladÂ
- 1 head of broccoliÂ
- ½ cup of uncooked orzoÂ
- 2 tbsp lemon juiceÂ
- ÂĽ cup feta cheese
- 1 tbsp olive oilÂ
- 1 tsp oregano
- 1 tsp garlic powderÂ
Instructions:
- Cut broccoli off stems then place in boiling water to stem
- Cook orzo according to package and add in spices to the potÂ
- drain, then add in broccoli, lemon juice, feta cheese, olive oil then enjoyÂ
Strawberry Oatmeal
- 5-6 strawberries
- ½ bananaÂ
- ½ cup of oatmeal
- â…” cup milk of choiceÂ
- CinnamonÂ
- Drizzle of honey
- 1 tbsp chia seedsÂ
Instructions:Â
- Mash banana and place it in a pot with milk, oatmeal, cinnamon, and chia seeds
- Cook until oatmeal is combined
- Top with sliced strawberries and honey and enjoyÂ
Carrot Cake Mini Loaves
- 2 cups whole wheat flourÂ
- 1cup shredded carrotsÂ
- 1/4 cup melted coconut oilÂ
- 3 eggs
- 1tsp baking powderÂ
- 1/2 tbsp cinnamonÂ
- 1/2 tbsp clovesÂ
- 1/2 tbsp nutmegÂ
- 1/3 cup date syrupÂ
- 1/3 cup raisins
Instructions:Â
•melt the coconut oil than mix in with eggsÂ
•after you mix together the wet ingredients add in the flour, spices, baking powder, and shredded carrotsÂ
•mix in raisinsÂ
•pour into a mini loaf pan ( each should be filled about 3/4 of the way)Â
•bake for 18-20 minutes at 375f
