Super Easy Vegetarian Thanksgiving Options

Everyone loves the holiday season because it’s a perfect excuse to pig out on all of our favorite foods. As someone that has a restricted diet, I find it hard to go out without having to worry about what I’m going to eat. I have been a vegetarian since I was about 6 years old, so for the last 14 years I have struggled with finding food to eat. Here are 5 vegetarian options that I think would be best to bring to the Thanksgiving table.

 

1. Pumpkin ravioli

 

Personally, I hate cooking and I thought that this would be a really challenging recipe, but it turns out that these are really easy to make. The recipe says to use chicken broth, but I used vegetable broth and it was amazing.

2. Quinoa Stuffing

For some reason stuffing is always a big topic of discussion at my family table during Thanksgiving. Some family members wait for it all year, while others pass on the opportunity to have some. Personally, stuffing is definitely not my go to holiday food, but this recipe really had me begging for seconds. Between the apples and the sweet potatoes, this may be my new holiday favorite.

3. Vegan Eggplant Balls

This recipe is super easy and fun to make. All you really need is eggplant, breadcrumbs, olive oil, and some seasoning. It’s definitely a recipe I would I would try out for picky eaters or bring to a Friendsgiving.

4. Roasted Butternut Squash Risotto

As someone that is obsessed with fall, this butternut squash risotto is the perfect addition to Thanksgiving dinner. This dish gives off amazing fall flavor.

5. Kale and Ricotta Stuffed Shells with Butternut Squash Sauce

This one is definitely more time consuming but this meal is absolutely my favorite. This sauce is out of this world and brings a unique flavor to the Thanksgiving table.
