My Top Three Quick and Easy Recipes 

After a long day of classes, sometimes making dinner is the last thing on my mind. These recipes are quick, easy and taste delicious!

Black Bean Sweet Potato Tortillas:

What you need:

  • Corn Tortillas
  • 3  small Sweet Potatoes
  • A can of black beans
  • Any cheese (I used mozzarella)
  • An Avocado

What you need to do:

  1. Preheat the oven to 400
  2. Peel and cut the sweet potatoes into cubes
  3. Put in the oven for about 15 minutes – or until soft
  4. While those are cooking, open and drain the black beans
  5. Pour into a bowl and smash all the black beans
  6. When the sweet potatoes are cooked, pour into the bowl and smash them up
  7. On a pan, place a corn tortilla, put a layer of black beans, a layer of sweet potato and a sprinkle of cheese and fold in half
  8. Place the tortillas on a pan and cook for 10 minutes
  9. While those cook, smash an avocado into a guacamole texture (or make or use a guac)
  10. When down, place the avocado on top of the tortilla
  11. Enjoy!

Southwest Peanut Salad:

What you need:

  • Lettuce
  • Can of Corn
  • Can of Black Beans
  • Avocado
  • Tortilla Strips
  • Thai Peanut Sauce

What you need to do:

  1. Start by opening and straining the corn and black beans
  2. Place the lettuce into a bowl
  3. Add a handful of black beans and corn
  4. Cut avocado into cubes and add to the salad
  5. Add the tortilla strips and Thai peanut sauce
  6. Mix and enjoy!

Pesto Tortellini with Roasted Vegetables:

What you need:

  • Tortellini
  • Creamy pesto sauce
  • Sweet Potatoes
  • Brussel Sprouts
  • Broccoli

What you Need to Do:

  1. Start by boiling a pot of water and preheat oven to 400
  2. Cut and peel sweet potatoes, cut Brussel sprouts and broccoli
  3. Place on a pan and put into an oven for 15 minutes
  4. When the water is boiling, add the tortellini
  5. When the tortellini is done and cook, strain and add back the pot
  6. Mix in the creamy pesto sauce to the tortellini
  7. When the vegetables are done, also add into the pot
  8. Mix and Enjoy!

These are some of my favorite things to quickly make at the end of the day. The best part of them, you can switch up what you add and make a whole new recipe!
