All the Single Ladies: How You Can Still Have a Fabulous Valentine’s Day

Valentine’s Day is a great holiday for those attached and in a relationship, but what about the rest of us? Personally, I think of it as a great excuse to party with your friends! Instead of having high expectations of a perfect and romantic dinner with the one you’re with, being single on Valentine’s Day can be easy, fun, and stress free! Why not invite some of your fabulous single girlfriends over for a low-key dinner and some drinks? Here are some simple recipes that you and some of your girls can enjoy this V-day!

Heart-Shaped Pepperoni Pizza

Ingredients:

  • Pre-made pizza dough
  • Pizza sauce
  • Mozzarella cheese
  • Parmesan cheese
  • Olive oil
  • Pepperoni, olives, onions, etc. Any toppings you want!

Directions:

  1. Roll the dough thin on a baking sheet and then carve the dough to form a heart shape. Roll up the edges of the dough and lightly sprinkle with olive oil.
  2. Spread as much pizza sauce on the dough as you like.
  3. Next, add your toppings. Give your pepperoni some lovin’ this Valentines Day by using a heart shaped cookie cutter on them.
  4. Finally, sprinkle on the Parmesan and Mozzarella cheese to your liking.
  5. Bake according to the instructions on the pizza dough package you purchased.
  6. Voila…a deli­cious, heart-shaped pizza that’s perfect for Valentine’s Day festivities!

Strawberry Valentine Oreo Cookies Recipe

Ingredients:

Cookies:
1 package of strawberry cake mix
2 eggs
3/4 cup of shortening

Frosting:
8 oz. cream cheese, room temperature
1/2 stick of butter, softened
2 tsp. vanilla
4 c. powdered sugar

Instructions:
 

Preheat oven to 350 degrees.

Mix together strawberry cake mix, eggs and shortening until well combined. The dough will be pretty thick. Roll dough into balls, making sure they are all similar in size. Place dough onto ungreased cookie sheet and bake for 8 minutes. Immediately transfer cookies to a cooking rack.

Mix together cream cheese, butter, vanilla and powdered sugar until smooth. Spread onto cooled cookies and sandwich together.

*Makes 12-15 cookies after they are sandwiched together

Strawberry Kiss

After all that cooking you’re going to be thirsty!

– 1 1/2 oz. Absolut Vanilia
– 1/2 oz. strawberry liqueur
– Splash of CranPineapple juice

Combine ingredients and top with champagne. Yum!
