Top 3 Fall Inspired Dorm Friendly Recipes

It’s officially fall, which means sweater weather, Halloween and best of all, pumpkin everything! Regardless of your baking skill level, these three simple pumpkin recipes can be easily made and enjoyed in a dorm room! 1. Pumpkin Pancakes 

       What you’ll need:

  • 1¼ cups all-purpose flour

  • 2 tablespoons light brown sugar

  • 2 teaspoons baking powder

  • ¼ teaspoon salt

  • 1 teaspoon ground cinnamon

  • ¼ teaspoon ground nutmeg

  • ⅛ teaspoon ground ginger

  • ⅛ teaspoon ground cloves

  • 1 cup milk (whole or 2%)

  • ½ cup canned pumpkin

  • 1 egg

  • 2 tablespoons vegetable oil

  • 1 teaspoon vanilla extract

This recipe is great for a Saturday morning boost. It gives you a base for a delicious sweet treat, but also allows for your spin with toppings such as chocolate chips, nuts, whip cream and more.

 

2. Pumpkin Macaroni and Cheese with Bacon

      What you’ll need:

  • Bacon

  • Macaroni Noodles

  • Milk

  • Fontina Cheese

  • Pumpkin

  • Bread Crumbs

  • Parmesan Cheese

  • Heavy Cream

  • Sage

  • Butter

This recipe has bacon, so enough said. It also puts a unique fall spin on a beloved classic. It’s perfect to eat for a nice day in bed, with Netflix and a warm blanket.  

 

3.  Vegan Pumpkin Bread

      What you’ll need:

  • 1 2/3 cups Ancient Harvest quinoa flour

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 1 1/2 teaspoons pumpkin pie spice

  • 1 teaspoon cinnamon

  • 1/2 teaspoon sea salt

  • 1 cup canned pumpkin puree

  • 1 cup coconut sugar (or other unrefined granulated sugar)

  • 1 teaspoon vanilla

  • 1/4 cup coconut oil, in a liquid state

  • 1/4 cup unsweetened apple sauce

  • 1 flax egg (1 tablespoon ground flaxseed + 3 tablespoons water)

  • 1/4 cup dairy-free mini chocolate chips, chopped pecans or chopped walnuts (optional)
