When you’re ballin’ on a budget and constantly on the go, it can be difficult to cook healthy meals for yourself multiple times a day. They say that the first wealth is health, but who said we can’t make it appetizing too? In order to help you get started, I’ve compiled two of my favorite meals that I personally like to make.

Chicken Tostadas

This Mexican dish is typically made with deep fried tortilla, meat, vegetables, and seasoned beans and is one of my favorite meals when I’ve got a busy day ahead of me. Not only is it healthy, but its ingredients are customizable.

 

Ingredients: 

* 15 oz can of black or healthy refried beans

* Guacamole salsa (recipe below)

* Feta or Cotija cheese

* Tortillas

* Grilled chicken breast

 

How to make it: 

1. Get a baking dish and arrange tortillas in a single layer. Spray them with cooking spray and sprinkle a little bit of salt on them. Bake at 400 degrees for 6 minutes.

2. While the shells are in the oven, make your guacamole salsa by adding tomato, avocado, red onion, cilantro, cumin, chili powder, salt and lime juice to a bowl.                     

3. To assemble tostadas, top each shell with guacamole, seasoned beans, chicken and cheese.

Salmon and Asparagus Foil Packs With Garlic Lemon Butter Sauce 

If you love seafood like me, this low carb and gluten free meal will surely make your taste buds dance! 

 

Ingredients:

* 2 slices of salmon fillet

* 2 tablespoons of broth (can be vegetable or chicken)

* 1 1/2 tablespoon fresh lemon juice

* 1 tablespoon of your favorite hot sauce 

* 4 teaspoons minced garlic (4 cloves)

* Salt and ground black pepper 

* 3-4 tablespoons butter, diced into cubes

* 2 tablespoons chopped cilantro

* 1 lb (450g) medium-thick asparagus, ends trimmed

 

How to make it:

1. Preheat your oven to 425ºF and cut two sheets of heavy-duty aluminum foil (14 x 12 inch). Lay each piece separately on the countertop. 

2. In a small bowl, combine broth, lemon juice, and hot sauce in order to make the garlic butter sauce.

3. Season both sides of the salmon fillets with salt and pepper and divide salmon onto the aluminum foil near the center. 

4. Place the trimmed asparagus to one side of the salmon, following the long direction of the foil.

5. Sprinkle garlic on top. Drizzle the garlic butter sauce all over the salmon fillets and asparagus.

6. Divide butter pieces evenly among the foil packets, layering them over the salmon and asparagus.

7. Wrap salmon foil packets in and crimp edges together before wrapping the ends up. Make sure to not wrap it too tight – you have to keep a little extra space inside for heat to circulate. 

8. Transfer the salmon foil packs to a baking sheet and bake in the oven, with the sealed side upward until salmon has cooked through. This process will take about 9 – 12 minutes. 

9. Carefully unwrap the baked salmon foil packets then drizzle with more lemon juice. Finish it up by garnishing with fresh cilantro and a slice of lemon. 


 

Trying new things is a great way to keep our minds active and our bodies alert. Not only are these meals delicious, but they’re easy to make and will prevent you from breaking the bank. Try them out when you have the chance to do so!
